Calville Rouge d'Hiver - an ancient cider sharp from Brittany.
Yorkshire Apples
Aka General. Complicated by so many synonyms this ancient variety was probably from Brittany or Normandy and later recorded by Le Lectier in Orleans in 1628. This sharp apple has excellent flavor, with a typically white/greenish flesh tinged with a more or less intense pinkish-red. They are very aromatic, with hints of raspberry and violet, and a light, melting, and slightly acidic texture. Pollination group 4.
